Dine under the stars. When the Hawaii Regional Cuisine was established in 1991 by 12 Hawaii chefs it set a culinary movement to blend diverse, ethnic flavors of cuisines from all around the world. One effort has been to take advantage of the freshest local island ingredients from places like Kula and Upcountry Maui, with the rich volcanic soil and cool climates on the slopes of Haleakala. These areas raise cattle, grow fruits and vegetables and produce Maui’s famous sweet onion.
